A life without cheese is no life at all. At least some would say. I have mostly been off of dairy my entire adult life for health reasons (and a happier tummy) and have had to get creative in the kitchen to recreate my comforting favorites. What I have learned over the years is what a gift Cashews are. They are like natures cheese! And cream, and milk, and so on. I have made cheesecake, creamy fudge, cream cheese (for use in enchiladas), Ricotta for lasagna, countless creamy sauces, all with cashews. This recipe below for my Broccoli ‘cheese’ soup is one of my most requested meals to take to any party. I am already planning on making 3 crock pots full for this years different Christmas gatherings (plus all the batches I plan to make for myself!) and guess what, it is made up of 6 ingredients. It is completely healthy. And I promise you, NO ONE WILL EVER KNOW THERE IS NO CHEESE. So don’t tell them. Just watch them breathe in its deliciousness and know they are making their body healthier, while they think they are indulging.

If you are trying to come off of dairy, or even just decrease it, bring some cashews into your life. You will feel good while you continue to eat those yummy foods you love.
I triple this recipe below to fill a crock pot. I rarely make a single batch, because this stuff goes fast. I recommend at least doubling this. Rest assured that it is pretty fail proof, as exact measurements can be kind of tricky. Enjoy my friends!

Broccoli Cheese Soup- Vegan style
The best Broccoli cheese soup you will ever eat, even without the cheese.
Instructions
Fill a large sauce pan with water and bring to a boil. Chop carrot, onion, and potatoes, and place in water. Boil until soft, about 20 minutes. Meanwhile steam your frozen Broccoli until soft. Once veggies are soft, transfer the potatoes, carrots, and onions to a blender. Use about 1 1/2 Cup of the water the vegetables were boiling in, and place in blender. Add cashews and Salt. Blend in high powered blender until very smooth. Make sure steam can escape from blender while blending. Remove from blende and stir the Broccoli into the soup base. Additional salt and pepper may be added to taste. Serve!

I made this last night and it was absolutely delicious! I also took a handful of frozen broccoli and tossed it in the blender with about a cup of the vegetable broth and then added it to the soup along with the other ingredients. I think that made it a bit creamier. Overall, I would say all of the effort is definitely worth the end result. Bonus Prize: My husband could not believe it was vegan much less that it contained absolutely NO cheese at all. This is a well thought out recipe and I would totally make it again. I’ve been wanting to make this ever since I saw you post about it. I finally made it today and it was so good! I eat dairy, but I could never get my broccoli cheese soup to work out because my cheese would cook into little balls haha! This one was so creamy, and a much healthier alternative.
