  1. Fill a large sauce pan with water and bring to a boil. Chop carrot, onion, and potatoes, and place in water. Boil until soft, about 20 minutes. Meanwhile steam your frozen Broccoli until soft. Once veggies are soft, transfer the potatoes, carrots, and onions to a blender. Use about 1 1/2 Cup of the water the vegetables were boiling in, and place in blender. Add cashews and Salt. Blend in high powered blender until very smooth. Make sure steam can escape from blender while blending. Remove from blende and stir the Broccoli into the soup base. Additional salt and pepper may be added to taste. Serve!
